Making our Caprese Grilled Cheese (or panini) - is the best thing you could do for yourself today. We use cherry tomatoes that are slightly heated in a pan with some oil, salt and pepper just until they burst. Then we smear some sourdough bread with pesto (you can use homemade or store bought!) and top it with lots of fresh mozzarella. We top the mozzarella with the lightly pan roasted tomatoes, a drizzle of balsamic glaze and press it all together with another slice of pesto spread sourdough. T
